When Whole Foods Market asked Charles Ventre to create a pork roll exclusively for its stores, the New York-based charcuterie maker decided he wanted to maintain the food's "authenticity" while making it just a little healthier. And so the Brooklyn native, who acknowledged pork roll is more of a "Jersey thing," tested a slew of different cuts before creating the Vincenza Pork Roll, which uses loin meat as opposed to fattier trim to give a "bolder, meatier" taste.
