A history of cheese in Oregon, Washington, and Idaho, Tami Parr's Pacific Northwest Cheese (Oregon State University Press) uncovers the rich tradition of cheesemaking from the earliest fur traders to modern-day small farmers. In an engaging history, Parr shows how regional cheesemaking found its way back to the farm. Along with documenting the history of cheese in the region, Parr reveals some of the Pacific Northwest's untold cheese stories. In The Green Vine (Skipstone Press), wine expert Shannon Borg demystifies the terms of sustainable winemaking and lays out a simple guide to West Coast wines and wineries that use both historical and modern sustainable practices. Traditional wine production is currently under threat from increasingly homogenized commercial processes and suffers from a large carbon footprint, from bottle and cork materials to water runoff and erosion. Many winemakers, however, are starting to take environmental stewardship very seriously, changing how they grow grapes and make wine.
