If you haven't yet tasted 'nduja, a spicy, spreadable sausage , food lovers may very well want to know why not. For years, 'nduja , a specialty of Calabria, was made in that part of Italy from the cheap scraps of pork meat from the shoulder, the head and the jowl, mixed in with some dried red chilies.
