Hygienically designed unit applies instant crust freeze with liquid nitrogen at -320°F in first stage to maximize yield and protect surface integrity. Cold gases from first stage travel into spiral stage which can freeze with consistency and efficiency in limited floor space. Spiral stage ranges from compact to high-production 20 x 20 ft models.
